Tabali Pedregoso Cabernet Sauvignon (Chile)

Pure Class. Deliciously dark in hue, Tabali Pedregoso Cabernet Sauvignon has aromas of green pepper and a slight minterality, along with juicy blackcurrant and aromatic black pepper. The palate showcases rich plum, crunchy blackberry, sweet vanilla, green pepper, herbal and violet notes.

This vineyard's location in the Maipo Valley allows for the slow maturation of Cabernet Sauvignon grapes due to high temperatures in the day, and very low temperatures at night. The vineyard is located on a gentle south-facing slope, receiving lots of sunshine in the summer, and proximity to the Maipo river provides cooling winds. This all helps the slow ripening of the grapes, making for a complex, juicy wine. The wine was aged in French oak for ten months.

Great with Chinese ribs or Birria tacos.
