This is another great example of Georgian Saperavi. A big, full-bodied, inky black red from Kakheti, in south-eastern Georgia. This is velvety smooth with flavours of blackcurrant, sour cherry and spice.
This wine comes from the Napareuli microclimate in the Alazani River valley, which features slightly cooler temperatures and higher humidity than surrounding areas. This means that grapes ripen more slowly, resulting in wines with great acidity and structural precision.
The Kirke harvest tradition dictates that grapes are picked by hand at night under the full moon, and crushed before sunrise while they are still cool.
This wine is aged in oak barrels for six months.
Pair this with cured meats and hard cheese.
