Veuve Fourny et Fils Champagne Blanc de Blancs (France)

This wine is blended from three consecutive vintages, and is made with hand-harvested Chardonnay grapes from vines that are 40 years old or older. It spends 7 months on lees, with a minimum of 3 years ageing prior to disgorgement, and a further six months “on the cork." The dosage is "Extra Brut", so this is lovely and dry. An ideal companion for your aperitifs, this is a Champagne that combines luxuriant creaminess with a saline finish.

This would be well-paired with seafood. Sushi would work perfectly, as would a portion of salty, crispy fish and chips.
