Rosé Champagne was originally developed by winemakers to compete with the Burgundian reds which were capturing the interest of France's royal court, and we are certainly glad that it was! Today, Rosé Champagne is produced by two methods, this wine in the 'Rosé de Saignée' method. 'Saignée' means 'bleeding', so juice is squeezed from red grapes after they have had a chance to rest on the skins, bleeding colour and structure into the juice from the skins. This results in full-flavoured, rich Rosé Champagnes with luxurious syrupy textures.
Pair this wine with smoked salmon, duck in a cherry and balsamic sauce, or a fresh tomato salad.
