Aged for 8 months in terracotta amphora which are traditional to wine producing countries such as Greece. This style of ageing adds minerality and allows for a clean finish. 'PHI' is also the 21st letter of the Ancient Greek alphabet and symbolises balance, harmony and proportion, adding to the wine's Hellenic influence.
